Pani Puri Recipe | Golgappay ka Khatta Pani

 Pani Puri, also known as Golgappa or Puchka, is a popular street food in India. It consists of hollow, crispy puris filled with a mixture of spicy, tangy, and sweet flavored water, along with a filling of mashed potatoes, chickpeas, onions, and various chutneys. Here's a basic recipe for making Pani Puri at home:

Ingredients:

For Puri:

  • 1 cup semolina (sooji)
  • 1/4 cup all-purpose flour (maida)
  • A pinch of baking soda
  • Water for kneading
    • Oil for frying

    For Pani (Spiced Water):

    • 1 cup mint leaves (pudina)
    • 1/2 cup coriander leaves (dhania)
    • 2-3 green chilies
    • 1-inch piece of ginger
    • 1 small lemon, juiced
    • 1 teaspoon roasted cumin powder
    • 1 teaspoon chaat masala
    • Black salt to taste
    • Tamarind pulp to taste
    • 2-3 cups cold water
    • For Filling:

      • Boiled and mashed potatoes
      • Boiled black chickpeas
      • Finely chopped onions
      • Sweet chutney (made from tamarind and jaggery)
      • Green chutney (made from mint and coriander)
      • Instructions:

        1. Prepare the Puri:

        • Mix semolina, all-purpose flour, baking soda, and a pinch of salt in a bowl.
        • Gradually add water and knead the mixture into a smooth dough.
        • Cover the dough and let it rest for 15-20 minutes.
        • Divide the dough into small balls and roll them into small puris.
        • Heat oil in a pan and deep-fry the puris until they puff up and become golden brown. Remove excess oil with a paper towel.
        • 2. Prepare the Pani:

          • In a blender, combine mint leaves, coriander leaves, green chilies, and ginger. Blend into a smooth paste.
          • Strain the paste to extract the juice.
          • Mix the juice with cold water.
          • Add lemon juice, roasted cumin powder, chaat masala, black salt, and tamarind pulp to the water. Adjust the quantities according to your taste preferences.

          3. Assemble the Pani Puri:

          • Make a small hole in the center of each puri.
          • Stuff the puris with a mixture of mashed potatoes, boiled chickpeas, and chopped onions.
          • Add sweet chutney and green chutney to each puri.
          • Dip the stuffed puri into the prepared spiced water (pani) and enjoy immediately.

          Serve Pani Puri immediately to enjoy the crispiness of the puris and the flavorful combination of the spiced water and fillings. Adjust the spice levels and chutney quantities according to your taste preferences.
