Croquetas
Making croquetas is a fun and delicious culinary adventure. Here's a basic recipe for making classic Spanish ham croquetas:
Ingredients:
For the béchamel sauce:
- 1/4 cup (60g) butter
- 1/4 cup (30g) all-purpose flour
- 2 cups (480ml) milk
- Salt and pepper to taste
- A pinch of nutmeg (optional)
For the filling:
- 1/2 cup (70g) finely chopped ham (or any other filling of your choice, such as chicken, seafood, or vegetables)
- Cooking oil for frying
- Breadcrumbs for coating
- 2 eggs, beaten
Instructions:
Prepare the béchamel sauce:
- In a saucepan, melt the butter over medium heat.
- Stir in the flour and cook, stirring constantly, for about 2 minutes to create a roux. Be careful not to let it brown.
- Gradually add the milk while whisking continuously to avoid lumps. Continue cooking and stirring until the sauce thickens and comes to a gentle boil. This should take about 5-10 minutes.
- Season the sauce with salt, pepper, and nutmeg (if using). Remember that ham is already salty, so be mindful of the salt level.
- Add the filling:
- Stir in the finely chopped ham or your chosen filling into the béchamel sauce. Mix well.
Chill the mixture:
Transfer the mixture to a bowl, cover it with plastic wrap directly touching the surface of the mixture (to prevent a skin from forming), and refrigerate it until it's cold and firm. This will take at least a couple of hours, but you can leave it overnight.
Shape the croquetas:
Once the mixture is chilled and firm, take a spoonful of it and shape it into small cylinders or balls, typically 2-3 inches long.
Coat and fry:
- Dip each croqueta into the beaten eggs and then coat it with breadcrumbs. Repeat this step to get a double layer of breadcrumbs for extra crispiness.
- Heat the cooking oil in a deep frying pan to 350-375°F (175-190°C). You want enough oil to cover the croquetas.
- Carefully fry the croquetas in batches until they're golden brown, which should take about 2-3 minutes per batch. Don't overcrowd the pan.
- Remove the croquetas with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Serve:
- Croquetas are best served hot and crispy. You can serve them as an appetizer, snack, or part of a tapas spread. Enjoy!
