Ingredients:
For the Dough:
- 2 cups all-purpose flour
- 1/4 cup oil
- 1/2 teaspoon salt
- Water, as needed
For the Filling:
- 2 cups boiled and mashed potatoes
- 1 cup boiled and chopped mixed vegetables (peas, carrots, and green beans work well)
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon grated ginger
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder (adjust to taste)
- Salt, to taste
- Fresh coriander leaves, chopped
- Juice of half a lemon
Other Ingredients:
- Oil, for deep frying
Instructions:
For the Dough:
- In a large mixing bowl, combine the flour, salt, and oil.
- Gradually add water and knead to form a smooth and firm dough.
- Cover the dough with a damp cloth and let it rest for at least 30 minutes
For the Filling:
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Once they splutter, add grated ginger.
- Add the boiled and mashed potatoes and chopped mixed vegetables.
- Stir in garam masala, ground coriander, ground cumin, turmeric, chili powder, and salt.
- Cook the mixture for about 5-7 minutes, stirring occasionally.
- Add chopped fresh coriander and lemon juice. Mix well and remove from heat.
Assembling and Frying:
- Divide the rested dough into small lemon-sized balls.
- Roll each ball into a thin oval or round shape.
- Cut the rolled dough in half to form two semi-circles.
- Take one semi-circle, wet the edges with water, and form a cone by folding it in half.
- Fill the cone with the prepared potato and vegetable mixture.
- Seal the open edge by pressing the wet edges together.
- Repeat the process for the remaining dough and filling.
Deep Frying:
- Heat oil in a deep fryer or a large pan over medium heat.
- Once the oil is hot, gently slide in the prepared samosas.
- Fry until they turn golden brown and crisp, turning occasionally for even cooking.
- Remove the samosas from the oil and place them on paper towels to absorb excess oil.
